Basic Sponge Cake with Egg
Ingridents
4 large eggs
100 gms (1cup) maida (plain flour)
120 gms (1cup) powdered sugar
1 tsp level baking powder
3/2 tsp vanilla essence
3/2 tsp hot boiling water
- Separate white and yellow of eggs.
- Beat egg whites till stiff.
- Add sugar gradually (2 tsp at a time) and keep beating till all the sugar is used.
- Add yolks. Mix well. Add essence.
- Add boiling water, half tsp at a time and beat more. Beat till the mixture of eggs and sugar is thick and frothy and is three times in volume.
- Sift maida with baking powder.
- Fold in maida gently, using a spoon ( not a beater) adding half of it at a time.
- Put in a greased and dusted tin 8-9" diameter and bake for 30-35 minutes in a preheated oven at 180°C.
