Tropic Fruit Delight

Ingredients
4-5 ripe peaches or small kashmiri apples
8-10 good day cashew biscuits
1 cup Sugar
1/2 cup water
Juice of 1/2 lemon
100 gms (1/2cup) cream
1/4 tsp vanilla
3 tsp powdered sugar

  1. Boil water, sugar and lemon juice in a wide sauce pan.  Keep aside. 
  2. Cut unpeeled fruit into half. Carefully , remove seeds. As you cut, keep putting the fruit in sugar syrup.
  3. Keep the syrup with all the fruit on fire for a few minutes till the fruit feels soft all through when a knife or skewer is inserted in it. Remove from fire. Cool. Chill. If peaches are used , remove skin. If apples are used, do not remove skin. Keep the Stewed fruit aside.
  4. Beat cream with essence and powdered sugar till firm peaks are formed. Transfer the whipped cream to an icing bag in the fridge.
  5. Place a piece of Stewed fruit with the flat side down on a biscuit. Pipe a star border and dot the fruit with a star. Top with a cherry.
  6. Chill for 1 hour before serving.
