Tropic Fruit Delight
Ingredients
4-5 ripe peaches or small kashmiri apples
8-10 good day cashew biscuits
1 cup Sugar
1/2 cup water
Juice of 1/2 lemon
100 gms (1/2cup) cream
1/4 tsp vanilla
3 tsp powdered sugar
- Boil water, sugar and lemon juice in a wide sauce pan. Keep aside.
- Cut unpeeled fruit into half. Carefully , remove seeds. As you cut, keep putting the fruit in sugar syrup.
- Keep the syrup with all the fruit on fire for a few minutes till the fruit feels soft all through when a knife or skewer is inserted in it. Remove from fire. Cool. Chill. If peaches are used , remove skin. If apples are used, do not remove skin. Keep the Stewed fruit aside.
- Beat cream with essence and powdered sugar till firm peaks are formed. Transfer the whipped cream to an icing bag in the fridge.
- Place a piece of Stewed fruit with the flat side down on a biscuit. Pipe a star border and dot the fruit with a star. Top with a cherry.
- Chill for 1 hour before serving.
